I like to make a double batch of these and store them in the freezer. Wheat free, dairy free and guilt free, I’ve been known to eat these for breakfast!
Ingredients:
2 cups rolled oats
1 cup sunflower seeds
1 cup desiccated coconut
1 heaped tbsp cacao or carob powder (I usually double this amount and use a 50:50 mix of cacao and carob powders)
1/2 cup tahini
1 tsp vanilla
1 cup softened dates
1 cup sultanas
2 tbsp honey (optional, and unnecessary if using carob)
Method:
Soak dates overnight or simmer until soft. Put the first 4 ingredients in a food processor and mix. Add the remaining ingredients and process. Refrigerate mixture for a few hours and then shape into balls and roll in extra coconut. Enjoy!
If you want to add some more Christmas indulgence to the recipe, add half a cup of rum to the water when you soak the dates overnight. Healthy (almost) guilt free rum balls!
