If you are like me and too much cacao is never enough, then these bliss balls are the bomb!


2 cups pitted dates
1/3 cup chia seeds
1 cup almond meal
1 cup walnuts
6 heaped dessert spoons cacao powder
1/2 teaspoon vanilla extract
3/4 cup goji berries (optional)


Place the pitted dates and chia seeds in a container and add hot water to almost cover the dates.  Soak for a few hours (or overnight) until the dates are soft and squishy.

In a food processor combine the soaked dates and chia with the almond meal, cacao and vanilla extract and blend until smooth.  Add the walnuts and mix until the walnut pieces are your desired size.  Add the goji berries (optional).

Cool the mixture in the fridge to make it easier to roll the balls.  You can roll  in your choice of cacao powder, crushed walnuts, almond meal or desiccated coconut.  Store the bliss balls in the fridge, or freeze them and use as required.

Experiment and play around with this recipe.  You can add other dried fruits instead of goji berries, use different nuts or add some cinnamon to spice it up.  You are only limited by your imagination!
